Fusion Chicken with Coconut Milk

It has been several months since I blogged and I’m rather glad so many want this recipe that it got me back into doing a blog. Now I have a couple more lined up. One I actually wrote in April! I named this Fusion Chicken because it’s got Chinese, Thai, and Indian seasonings. Please let me know if you have a better name. Leave it in the comments for  me. One Day Vacation–Mission Accomplished

So what do you do when you get a call that your niece and great niece that you haven’t seen in several years may be in your almost vicinity for a day or less?  There is no question that you want to see them.  They are driving in from Ohio.  However, making plans isn’t going to work because You aren’t positive you will get a chance to see them. You don’t know if you are going to get an hour or a day They will be one hour away from you and you need to go to them. You only know that the ocean is an important stop to the youngest member. So I start thinking, ok, how long will it take for me to get them and drive to say Santa Monica beach or Malibu? Google to the rescue.  With construction on the 405 and times varying from 35 minutes to 1 3/4 hours, I must come up with another plan. read...

Is Buying Organic Important?

Food is important to me.  It always has been.  I love really good food and I choose not to eat food that I know is not of good quality.  Why waste the calories? I have enough problem watching what I eat.  Why give my body calories from foods that don’t taste great?  If I’m going to gain weight from eating. it better be the best tasting food I can eat. So we like to have our salads made with  romaine lettuce leaves,  sweet red bell peppers, onions, great tasting quality tomatoes and Persian cucumbers.    We make our own salad dressing with salt, pepper, extra virgin olive oil,  raspberry vinegar and a good balsamic vinegar. read...
